Preheat the oven to 150°C. 2. With a sharp knife, score the skin at 1cm intervals without cutting into the meat (or ask your butcher to do it). 3. Mix the salt, pepper, coriander seeds and mustard seeds, and rub it all over the meat . Place the meat in a roasting dish and roast in the oven for 3 hours. 4.
