Keto Detox Veggie Soup with Olive oil & Chicken broth

INGREDIENTS
1 Tbsp. Olive oil
2 C. Broccoli florets
1 C. Cauliflower florets
½ Onion chopped
½ C. Celery chopped
Pinch of matchstick carrots or color
3 tsp. Minced garlic
2 tsp. Ginger paste
1 tsp. Turmeric
1 tsp. Ground thyme
Salt and pepper to taste
10 oz. Diced tomatoes
Juice from half of a lemon
4 C. Chicken broth
3 C. Chopped kale
INSTRUCTIONS
- Add the oil to a large saucepan over medium heat.
- Stir the broccoli, cauliflower, onions, celery and carrots into the oil in the pot. Saute until the vegetables are beginning to soften.
- Mix in the garlic, ginger paste, turmeric, ground thyme and salt and pepper to taste.
- Pour in the diced tomatoes and chicken broth. Stir to combine. Cover and simmer for 45 minutes, or until the vegetables are softened.
- Mix in the kale, and simmer until wilted.
