This Keto Green Chilly Stuffed Chicken is a quick and easy

Ingredients
4 small chicken breast
1 (4 ounce) can mild green chilies (see notes)
3/4 cup shredded cheddar cheese
2 ounce cream cheese, softened
2 tablespoons chopped green onions (optional, but adds great
flavor)
2 teaspoons cajun seasoning (or your favorite all purpose
seasoning)
Instructions
1. Preheat the oven to 400 degrees F
2. Drain the canned green chilies and place them in between
paper towels and lightly press down. You need the chilies to be as dry as
possible so you do not have too much moisture in your filling mixture.
3. In a small bowl combine the canned green chilis, cheddar
cheese, green onions and softened cream cheese, set aside. This Keto Green

4. Slice each chicken breast lengthwise so that the breast
folds open (be sure not to slice all the way through)
5. Spread the cheddar mixture on one side of the chicken and

6. Lightly sprinkle the Cajun seasoning on each side of the
chicken.

Cajun seasoning: This can easily be found in the spice
section of your grocery store. You can sub your favorite all purpose seasoning
or taco seasoning if you prefer.
