Special Chicken Salad
Special Chicken Salad
(Ready in about 1 hour 20 minutes | Servings 3)
You can add boiled eggs to the salad just like grandma used to make.
You can also use leftover chicken from a roast chicken.
INGREDIENTS :-
1 chicken breast, skinless
1/4 mayonnaise
1/4 cup sour cream
2 tablespoons Cottage cheese, room temperature
Salt and black pepper, to taste
1/4 cup sunflower seeds, hulled and roasted
1/2 avocado, peeled and cubed
1/2 teaspoon fresh garlic, minced
2 tablespoons scallions, chopped
RECIPE :-
1. Bring a pot of well-salted water to a rolling boil.
2. Add the chicken to the boiling water; now, turn off the heat, cover, and let the chicken stand in the hot water for 15 minutes.
3. Then, drain the water; chop the chicken into bite-sized pieces. Add the remaining ingredients and mix well.
4. Place in the refrigerator for at least one hour. Serve well chilled. Enjoy!
