 Keto Chocolate Cake - Net Carb - 6gm

Always a crowd-pleaser — a simple chocolate sponge covered with delicious buttercream is perfect for any celebration 


INGREDIENTS - 

For The Sponge 

150 g  almond flour 
70 g cocoa powder 
85 g coconut flour 
4 tbsp flaxseed meal 
2 tsp baking powder 
115 g  butter, softened 
150 g granulated sweetener Erythritol 
4 eggs 
1 tsp vanilla extract 
240 ml almond milk 
80 ml strong coffee 

For The Frosting 

225 g cream cheese, softened 
115 g butter, softened 
90 g powdered sweetener Erythritol 
60 g cocoa powder 
60 g coconut flour 
1/4 tsp instant coffee granules 
180 ml double cream 

To Decorate (optional) 

1-2 squares dark chocolate, grated 
1smail handful nuts, chopped
 

METHOD -

For the Sponge: 

1.Preheat the oven to 180°C (160°C fan)| 350°F | gas 4. 
Grease and line two 20cm | 8" round cake tins with baking parchment. 
2.In a large bowl, whisk together the almond flour, cocoa powder, coconut flour, flaxseed meal and baking powder. 
3.In another large bowl, using an electric whisk or wooden spoon, beat the butter and sweetener together until light and fluffy. 
4.Add the eggs one at a time. then the vanilla. Now add in the dry ingredients and mix until fully combined. Finally stir in the milk and coffee. 
5.Divide the batter between the cake tins and bake for 25-30 minutes. Once cooked remove the cakes from the oven and leave them to cool. 

For the Frosting:

1.Beat the cream cheese and butter together with a hand mixer in a large bowl until smooth and super creamy. 
2.Add the sweetener cocoa powder, coconut flour and instant coffee. and beat until there are no lumps. 3.Add the cream, and beat until fully mixed in. 

To Assemble: 

1.Place one of the cakes on a cake stand or plate and then spread a thick layer of buttercream on top. 2.Repeat with the remaining layers, and spread the around the edges. Use a palette knife to smooth everything over neatly. 
3.Grate some sugar free chocolate on the top to decorate or sprinkle with a handful of your favourite crushed nuts.
