Egg, Spinach and Mushroom Pie
Egg, Spinach and Mushroom Pie
Cook and Prep time: 25 minutes
Ingredients:
8 eggs
2 tbsp butter
2 cups chopped spinach
1/4 cup button mushrooms, sliced very thin
Salt and pepper to taste
Directions
1. Melt butter in saucepan on medium high heat.
2. Add mushrooms and spinach, stir and cook until wilted.
Approximately 4 minutes.
3. In a small bowl, whisk eggs, salt and pepper and pour
into saucepan.
4. Reduce heat to low and cover.
5. Let cook until center is set. Approximately 12 minutes.
6. Turn off heat for 3 minutes to set.
7. Cut into triangles.
8. Serve immediately.
