Ingredients
2 cups finely chopped kale
2 cups finely chopped romaine
1 cup grated carrots
1 cup grated radishes
1/2 cup finely chopped yellow bell pepper
1/4 cup slivered almonds
Garlic Lemon Vinaigrette
2 tablespoons fresh lemon juice
4 tablespoons avocado or olive oil
1 teaspoon minced garlic about 2 cloves
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1 tablespoon fresh cilantro leaves
Instructions
1. Combine all the salad ingredients together in a large
bowl and toss.
2. To make the dressing, combine all ingredients in a
blender or small food processor. Pulse
until combined and emulsified. Pour over
salad and toss.
Notes
If meal prepping, keep salad and dressing separate until
ready to eat.
