This low-carb red, white and blue fruit pizza is an easy dessert recipe for your 4th of July party or summer cookout.
A soft cookie
crust topped with cream cheese frosting, strawberries and blueberries make this
the perfect summer dessert.
INGREDIENTS
FOR THE CRUST:
1 cup fine blanched almond flour
1/4 cup coconut flour
1/4 cup monk fruit sweetener
1/2 teaspoon baking powder
4 tablespoons butter, softened
1 teaspoon vanilla extract
1 large egg
1/4 cup unsweetened almond milk
FOR THE FROSTING:
6 ounces cream cheese, softened
3 tablespoons Swerve powdered sweetener (or monk fruit
sweetener)
4 tablespoons heavy whipping cream
1 teaspoon vanilla extract
FOR THE GARNISH:
1 cup fresh strawberries, sliced
1/2 cup fresh blueberries
INSTRUCTIONS
1. Preheat the oven to 350 degrees F and line the bottom of
a 9-inch spring-form pan with parchment paper greased with butter.
2. In a large bowl, mix together the crust ingredients until
a dough forms.
3. Spread the crust mixture evenly in the prepared pan and
bake for 12-14 minutes, until golden. Allow the crust to cool completely before
releasing it from the pan.
4. Make the frosting: Mix the frosting ingredients until
combined using a hand mixer. Spread evenly over the cooled crust. Garnish with
fresh berries.
5. Cover and refrigerate for at least 2 hours before
serving.
NOTES
1. The cookie crust and frosting can be made ahead of time and refrigerated. Add frosting and berries when ready to serve.
